Add the ground pork (or turkey) and cook until browned, breaking it apart with a spatula, about 5-7 minutes.
Stir in the minced garlic and ginger, cooking for an additional 1-2 minutes until fragrant.
Add the coleslaw mix and sliced green onions to the skillet. Stir well to combine and cook for about 3-4 minutes until the cabbage is tender.
Pour in the soy sauce, sesame oil, and rice vinegar. Stir to evenly coat the mixture. Season with salt and pepper to taste.
Cook for another 2-3 minutes, allowing the flavors to meld.
Serve hot, garnished with sesame seeds if desired.
