Step-by-Step Instructions
  1. Preheat your oven to 400°F (200°C) and grease a baking dish with olive oil.
  2. Whisk together brown sugar, soy sauce, rice vinegar, minced garlic, and grated ginger in a bowl.
  3. Pat the salmon fillets dry, rub with olive oil, and sprinkle with salt and pepper.
  4. Place salmon in the baking dish, pour two-thirds of the glaze over it, and scatter diced pineapple around.
  5. Bake for 12-15 minutes or until salmon easily flakes and reaches 145°F (63°C).
  6. Optionally broil for 1-2 minutes for extra caramelization.
  7. Let salmon rest for 5 minutes, garnish with parsley, and drizzle with reserved glaze before serving.
