  • 4 tablespoons pizza sauce
  • 1 cup shredded mozzarella cheese
  • 4 large eggs
  • 1/2 cup diced bell peppers any color
  • 1/2 cup cooked and crumbled breakfast sausage
  • 1/4 teaspoon garlic powder
  • 1/4 teaspoon black pepper
  • 1/4 teaspoon salt
  • Fresh basil or parsley for garnish optional

Method
 

  1. Preheat your oven to 375°F.
  2. Place the English muffin halves on a baking sheet, cut side up.
  3. Spread 2 tablespoons of pizza sauce on each muffin half.
  4. Sprinkle shredded mozzarella cheese evenly over the sauce.
  5. In a small bowl, whisk together the eggs, garlic powder, salt, and black pepper.
  6. In a skillet over medium heat, scramble the egg mixture until just set, about 3-4 minutes.
  7. Distribute the scrambled eggs evenly over the cheese on each muffin half.
  8. Top with diced bell peppers and crumbled sausage.
  9. Bake in the preheated oven for 10-12 minutes, or until the cheese is melted and bubbly.
  10. Remove from the oven and let cool for a minute. Garnish with fresh basil or parsley if desired.
