For the Dressing
  • ½ cup Orange Juice Substitute with apple juice if needed
  • ¼ cup White Sugar Substitute with honey or maple syrup
  • ¼ teaspoon Apple Pie Spice Blend of cinnamon and nutmeg works well
  • 1 lemon Lemon Zest Substitute with orange zest
  • 1 orange Orange Zest Can be omitted if desired

Method
 

Instructions for Salad
  1. Step 1: Preheat your oven to 350°F (175°C). Spread the pecans evenly on a baking sheet and toast them for 8-10 minutes, or until fragrant and lightly golden.
  2. Step 2: In a small saucepan over medium heat, whisk together the orange juice, white sugar, apple pie spice, lemon zest, and orange zest. Cook for 3-4 minutes until sugar dissolves.
  3. Step 3: While the dressing cools, core and slice the green and red apples into bite-sized pieces and toss with lemon juice to prevent browning.
  4. Step 4: Peel the navel oranges and segment them by cutting between the membranes, cutting into smaller bite-sized pieces if desired.
  5. Step 5: In a large mixing bowl, combine the apple pieces, dried cranberries, cooled pecans, grapes, and orange segments. Gently toss together.
  6. Step 6: Drizzle the spiced citrus dressing over the fruit and toss gently until all fruit is coated.
  7. Step 7: Serve immediately or store in the refrigerator for up to 2 days.
