  • 2 large eggs

  • 1 teaspoon almond extract
  • ½ cup rainbow sprinkles plus extra for topping
  • ½ cup red and blue star-shaped sprinkles

Method
 

  1. Preheat your oven to 350°F (175°C). Grease and flour a 9x13-inch baking pan or line it with parchment paper.
  2. In a medium bowl, whisk together the flour, baking powder, baking soda, and salt. Set aside.
  3. In a large mixing bowl, cream together the softened butter and granulated sugar until light and fluffy, about 3-4 minutes.
  4. Add the eggs, vanilla extract, and almond extract to the butter mixture, mixing until well combined.
  5. Gradually add the dry ingredients to the wet ingredients, mixing until just combined. Do not overmix.
  6. Gently fold in the rainbow sprinkles and star-shaped sprinkles until evenly distributed.
  7. Pour the batter into the prepared baking pan and spread it evenly.
  8. Bake for 25-30 minutes, or until a toothpick inserted in the center comes out clean. Allow the cake to cool completely in the pan on a wire rack.
  9. Once cooled, top with additional sprinkles if desired and cut into squares to serve.
