Preheat your grill or stovetop grill pan over medium-high heat.
In a small bowl, mix together the olive oil, chili powder, garlic powder, cumin, salt, black pepper, and paprika. Rub this spice mixture all over the chicken breasts.
Grill the chicken for about 6-7 minutes on each side, or until the internal temperature reaches 165°F. Remove from the grill and let it rest for 5 minutes before slicing.
While the chicken is resting, in another bowl, combine the mayonnaise and lime juice. Mix well.
Slice the bolillo rolls in half and spread the lime mayo on both sides.
Layer the sliced chicken, avocado, tomato, and shredded lettuce on the bottom half of each roll.
Top with fresh cilantro leaves if desired, then place the top half of the roll on each sandwich.
