Preparation
- Preheat your oven to 425°F (220°C) and line a baking sheet with parchment paper.
- Lay a flour tortilla flat, then layer provolone cheese, deli roast beef, and French fried onions on one half. Brush edges with olive oil.
- Roll the tortilla tightly from the filled side towards the unfilled edge, sealing it well. Place seam-side down on the baking sheet.
- Repeat with the remaining tortillas, brushing tops with olive oil before baking.
- Bake for 8-10 minutes, turning halfway, until golden brown and cheese is bubbling.
- While baking, prepare the au jus by combining beef consommé, water, Worcestershire sauce, soy sauce, onion powder, and garlic powder in a saucepan. Heat until simmering.
- Remove baked roll ups, allow to cool slightly, then slice into halves or thirds and serve with the au jus.
