Ingredients
  

  • 2 cups frozen corn thawed
  • 1 cup cherry tomatoes halved
  • 1 cup shredded cheddar cheese
  • 1 cup diced bell pepper any color
  • 1/2 cup red onion finely chopped
  • 1 cup sour cream
  • 1/2 cup mayonnaise
  • 1 tablespoon lime juice
  • 1 teaspoon chili powder
  • Salt and pepper to taste
  • 3 cups Fritos corn chips

Method
 

  1. In a large mixing bowl, combine the thawed corn, cherry tomatoes, cheddar cheese, bell pepper, and red onion. Stir until well mixed.
  2. In a separate bowl, whisk together the sour cream, mayonnaise, lime juice, chili powder, salt, and pepper until smooth.
  3. Pour the dressing over the corn mixture and gently fold until everything is evenly coated.
  4. Just before serving, add the Fritos corn chips to the salad and toss lightly to combine.
  5. Chill the salad in the refrigerator for at least 30 minutes to allow the flavors to meld.
