  • 2 cups cooked chicken shredded
  • 1/4 cup unsalted butter
  • 4 cloves garlic minced
  • 1/4 cup honey
  • 1/2 cup BBQ sauce
  • 1 teaspoon smoked paprika
  • 1 teaspoon onion powder
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 8 small flour or corn tortillas
  • 1 cup shredded lettuce
  • 1 cup diced tomatoes
  • 1/2 cup shredded cheddar cheese
  • 1/4 cup chopped fresh cilantro
  • Lime wedges for serving

Method
 

  1. In a large skillet, melt the butter over medium heat. Add the minced garlic and sauté for about 1 minute until fragrant, being careful not to burn it.
  2. Stir in the honey, BBQ sauce, smoked paprika, onion powder, salt, and black pepper. Mix well and let the sauce simmer for 2-3 minutes.
  3. Add the shredded chicken to the skillet and toss to coat it evenly in the sauce. Cook for an additional 5 minutes, stirring occasionally, until the chicken is heated through.
  4. While the chicken is cooking, warm the tortillas in a separate skillet or microwave until pliable.
  5. To assemble the tacos, place a generous portion of the BBQ chicken mixture on each tortilla. Top with shredded lettuce, diced tomatoes, shredded cheddar cheese, and chopped cilantro.
  6. Serve the tacos with lime wedges on the side for squeezing over the top.
