Ingredients

For the Steak
  • 2 pieces Steak (Ribeye or Sirloin) Ensure well-seasoned for a flavorful crust.
  • 1 teaspoon Salt Essential for seasoning.
  • 1 teaspoon Pepper Use freshly ground for best results.
  • 1 tablespoon Olive Oil Used for searing steak.
  • 2 tablespoons Butter Unsalted preferred for control over saltiness.
  • 4 cloves Garlic Freshly minced preferred.
For the Tortellini
  • 12 ounces Cheese Tortellini (Fresh or Frozen) Fresh is ideal, but frozen works too.
For the Alfredo Sauce
  • 1 cup Heavy Cream Base of the rich Alfredo sauce.
  • 1/2 cup Milk Use for a lighter sauce.
  • 1 cup Parmesan Cheese (Grated) Freshly grated melts better.
  • 1 cup Reserved Pasta Water Used to thin the sauce if needed.
For Garnishing
  • 1/4 cup Fresh Herbs (Parsley or Basil) Chop and sprinkle before serving.

Equipment

  • Large skillet
  • Large pot
  • Saucepan

Method

Step-by-Step Instructions
  1. Pat the steak dry with paper towels and season generously with salt and pepper. Let it rest for 15 minutes.
  2. In a large pot, bring salted water to a boil. Cook cheese tortellini according to package directions, about 3-5 minutes, then drain it, reserving a cup of pasta water.
  3. Heat a skillet over medium-high heat, add olive oil, and sear the seasoned steak for 3-4 minutes on each side until golden brown. Let it rest for 5 minutes.
  4. In the same skillet, melt butter and sauté minced garlic for 30 seconds until fragrant.
  5. In a separate saucepan, heat cream and milk, stir in Parmesan cheese until melted and thickened, about 3-5 minutes. Adjust thickness with reserved pasta water.
  6. Combine cooked tortellini into the Alfredo sauce, tossing gently to coat for about a minute.
  7. Slice the rested steak, drizzle with garlic butter, and serve alongside the cheesy tortellini, garnished with fresh herbs.
