In a small bowl, mix together the melted butter, minced garlic, Italian seasoning, salt, black pepper, and red pepper flakes (if using).
Place the halved baby potatoes in the bottom of the crockpot.
Lay the chicken breasts on top of the potatoes.
Pour the garlic butter mixture over the chicken and potatoes, making sure to coat everything evenly.
Sprinkle the grated Parmesan cheese over the top.
Cover the crockpot and cook on low for 6-7 hours or on high for 3-4 hours, until the chicken is cooked through and the potatoes are tender.
Once done, garnish with fresh parsley before serving.
