Ingredients
  

  • 4 boneless skinless chicken breasts (about 1.5 pounds)
  • 1 pound baby potatoes halved
  • 1/2 cup grated Parmesan cheese
  • 1/4 cup unsalted butter melted
  • 4 cloves garlic minced
  • 1 teaspoon dried Italian seasoning
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/4 teaspoon red pepper flakes optional
  • 1/4 cup fresh parsley chopped (for garnish)

Method
 

  1. In a small bowl, mix together the melted butter, minced garlic, Italian seasoning, salt, black pepper, and red pepper flakes (if using).
  2. Place the halved baby potatoes in the bottom of the crockpot.
  3. Lay the chicken breasts on top of the potatoes.
  4. Pour the garlic butter mixture over the chicken and potatoes, making sure to coat everything evenly.
  5. Sprinkle the grated Parmesan cheese over the top.
  6. Cover the crockpot and cook on low for 6-7 hours or on high for 3-4 hours, until the chicken is cooked through and the potatoes are tender.
  7. Once done, garnish with fresh parsley before serving.
