  4. After rising, punch the dough down, divide into 24 pieces, and roll each into a stick. Let them rest on a greased baking sheet for 25 minutes.
  5. In a pot, bring water to a gentle simmer and add baking soda. Keep it warm for the pretzel cooking process.
  6. Boil each pretzel stick in the baking soda bath for about 30 seconds, turning halfway through.
  7. Place the boiled pretzel sticks on a baking sheet, brush with egg wash, and sprinkle with coarse sea salt.
