Step-by-Step Instructions
  1. Mix cream cheese, granulated sugar, and vanilla extract until fluffy and smooth. Freeze portions until firm.
  2. Whisk together all-purpose flour, baking soda, salt, ground ginger, ground cinnamon, nutmeg, allspice, and cloves.
  3. Beat softened butter and light brown sugar until light and fluffy. Gradually mix in egg yolks and molasses.
  4. Combine the dry mixture with the butter-sugar mixture. Mix until just combined.
  5. Form a tablespoon of dough, place a frozen cheesecake ball inside, and roll into a smooth ball. Roll in spiced sugar.
  6. Preheat oven to 350°F (175°C). Bake cookies for 11-12 minutes. Cool on the sheet for 10 minutes before transferring to a rack.
