  • 2 cups all-purpose flour
  • 1 tablespoon baking powder
  • 1 teaspoon salt
  • 1 teaspoon garlic powder
  • 1 tablespoon fresh rosemary chopped (or 1 teaspoon dried rosemary)
  • 1 cup warm water about 110°F
  • 1/4 cup olive oil plus extra for drizzling
  • 1 tablespoon honey
  • 1/2 teaspoon black pepper
  • Coarse sea salt for topping

Method
 

  1. Preheat your oven to 400°F. Grease a muffin tin with olive oil or line with paper liners.
  2. In a large mixing bowl, combine the flour, baking powder, salt, garlic powder, and rosemary. Mix well.
  3. In a separate bowl, whisk together the warm water, olive oil, honey, and black pepper until combined.
  4. Pour the wet ingredients into the dry ingredients. Stir until just combined; do not overmix. The batter will be thick and slightly sticky.
  5. Spoon the batter evenly into the prepared muffin tin, filling each cup about 2/3 full. Drizzle a little olive oil on top of each muffin and sprinkle with coarse sea salt.
  6. Bake for 18-20 minutes or until the tops are golden brown and a toothpick inserted into the center comes out clean.
  7. Remove from the oven and let cool in the pan for 5 minutes before transferring to a wire rack to cool completely.
