Ingredients
  

For the Meatballs
  • 1 pound Ground Beef Can substitute with turkey, chicken or lamb.
  • 1/2 cup Breadcrumbs Adjust according to mixture consistency.
  • 1/4 cup Fresh Parsley Chopped.
  • 1/4 cup Grated Parmesan Cheese
  • 1 teaspoon Garlic Powder
  • 1 teaspoon Dried Oregano
  • 1 teaspoon Ground Cumin
  • 1/4 teaspoon Ground Cinnamon
  • 1 teaspoon Salt
  • 1/2 teaspoon Black Pepper
  • 2 tablespoons Olive Oil For drizzling.
For the Bowl Assembly
  • 2 cups Cooked White Rice Fluffy.
  • 1 cup Cherry Tomatoes Halved.
  • 1 cup Cucumber Diced.
  • 1/2 medium Red Onion Thinly sliced.
  • 1/2 cup Kalamata Olives Pitted.
  • 1 cup Tzatziki Sauce Creamy, herby.
  • 1 tablespoon Fresh Lemon Juice

Method
 

Directions
  1. Preheat the oven to 400°F (200°C).
  2. In a large mixing bowl, combine ground beef, breadcrumbs, parsley, Parmesan, garlic powder, oregano, cumin, cinnamon, salt, and pepper. Mix until well combined.
  3. Shape into 1 to 1.5-inch meatballs, aiming for about 18–24 meatballs.
  4. Line a baking sheet with parchment paper and place meatballs on it. Drizzle olive oil over meatballs.
  5. Bake for 15-20 minutes until cooked through and browned.
  6. Cook rice according to package instructions.
  7. In a bowl, combine cherry tomatoes, cucumber, onion, and olives. Toss gently.
  8. In serving bowls, layer rice, veggie mixture, meatballs, tzatziki, and lemon juice.
