- Preheat the oven to 400°F (200°C).
- In a large mixing bowl, combine ground beef, breadcrumbs, parsley, Parmesan, garlic powder, oregano, cumin, cinnamon, salt, and pepper. Mix until well combined.
- Shape into 1 to 1.5-inch meatballs, aiming for about 18–24 meatballs.
- Line a baking sheet with parchment paper and place meatballs on it. Drizzle olive oil over meatballs.
- Bake for 15-20 minutes until cooked through and browned.
- Cook rice according to package instructions.
- In a bowl, combine cherry tomatoes, cucumber, onion, and olives. Toss gently.
- In serving bowls, layer rice, veggie mixture, meatballs, tzatziki, and lemon juice.
