Preheat your grill or grill pan over medium-high heat.
In a large bowl, combine the chicken pieces, olive oil, garlic powder, paprika, salt, black pepper, and cayenne pepper. Toss until the chicken is evenly coated.
Thread the chicken pieces onto skewers, if using, or place them directly on the grill. Grill the chicken for about 8-10 minutes, turning occasionally, until cooked through and no longer pink in the center.
While the chicken is grilling, prepare the creamy garlic sauce. In a small bowl, mix together the mayonnaise, sour cream, lemon juice, and minced garlic until smooth.
Once the chicken is done, remove it from the grill and let it rest for a few minutes.
Serve the grilled chicken bites with the creamy garlic sauce on the side for dipping. Garnish with chopped parsley.
