  • 2 pounds lamb chops about 8 chops, 1-inch thick
  • 4 cloves garlic minced
  • 2 tablespoons fresh rosemary chopped (or 2 teaspoons dried)
  • 2 tablespoons olive oil
  • 1 teaspoon salt
  • 1 teaspoon black pepper
  • 1 tablespoon lemon juice

Method
 

  1. In a large bowl, combine minced garlic, rosemary, olive oil, salt, pepper, and lemon juice. Mix well to create a marinade.
  2. Add the lamb chops to the bowl, ensuring they are well coated with the marinade. Cover and refrigerate for at least 1 hour, or up to overnight for more flavor.
  3. Preheat your grill to medium-high heat.
  4. Remove the lamb chops from the marinade and let them sit at room temperature for about 15 minutes before grilling.
  5. Place the lamb chops on the grill and cook for 4-5 minutes on each side for medium-rare, or longer if you prefer them more well done.
  6. Remove the lamb chops from the grill and let them rest for 5 minutes before serving.
