  1. Preheat your oven to 350°F (175°C).
  2. Slice zucchini into ½-inch rounds, salt and let sit in a colander for 15 minutes. Rinse and pat dry.
  3. Heat olive oil in a skillet and sauté diced onion for about 2 minutes until translucent.
  4. Add minced garlic and the ground beef to the skillet, cook for about 5 minutes until browned.
  5. Stir in diced tomatoes, Italian seasoning, salt, and pepper, simmer for 1 minute.
  6. Layer half of beef mixture, zucchini, and cheese in a baking dish. Repeat layers.
