  • 2 tablespoons Toasted Sesame Seeds
For the Chicken and Seasoning
  • 1 pound Boneless Skinless Chicken Thighs diced
  • 2 cloves Grated Garlic
  • 1 tablespoon Grated Ginger
  • 1 teaspoon Onion Powder
  • 1/4 cup Soy Sauce
For the Sauce
  • 2 tablespoons Maple Syrup
  • 2 tablespoons Shaoxing Wine
  • 2 tablespoons Tomato Paste (puree)
  • 1/4 cup Pineapple Juice
  • 1 tablespoon Sriracha
  • 1 tablespoon Sesame Oil
For the Spicy Mayo
  • 1/2 cup Light Mayo
  • 1 tablespoon Sriracha (for mayo)
  • 1 tablespoon Water optional

Method
 

Step-by-Step Instructions
  1. In a small bowl, combine light mayo and sriracha to create your spicy mayo. Adjust the consistency with a splash of water.
  2. In another bowl, whisk together soy sauce, maple syrup, Shaoxing wine, pineapple juice, tomato paste, sesame oil, and sriracha until well-blended.
  3. Heat a non-stick frying pan over medium-high heat, add chicken, garlic, ginger, and onion powder. Sauté for about 6-8 minutes until cooked through.
  4. Pour the prepared sauce into the pan with chicken, stirring well, and simmer for approximately 4-5 minutes until sauce thickens.
  5. Start by spooning a generous portion of cooked rice into a bowl, layer with chicken and arrange fresh toppings beautifully.
  6. Drizzle spicy mayo over the assembled bowl and serve immediately.
