In a large mixing bowl, combine the rolled oats, almond flour, protein powder, baking soda, cinnamon, and salt.
In a separate bowl, whisk together the honey or maple syrup, applesauce, vanilla extract, and egg until well combined.
Pour the wet ingredients into the dry ingredients and mix until just combined.
Fold in the dark chocolate chips or dried fruit if using.
Using a tablespoon, scoop the dough onto the prepared baking sheet, spacing them about 2 inches apart.
Flatten each cookie slightly with the back of the spoon.
Bake for 10-12 minutes or until the edges are golden brown.
Allow the cookies to cool on the baking sheet for 5 minutes before transferring them to a wire rack to cool completely.
