  • 4 cups Vegetable Broth Low sodium preferred
  • 1 cup Dried Green Lentils Do not rinse before cooking

  • 1 tablespoon Chili Powder Adjust to taste
  • 1 teaspoon Cumin
  • to taste Salt
  • to taste Pepper
For Garnishing (optional)
  • 1 Avocado Diced
  • 1/4 cup Fresh Parsley or Cilantro Chopped

Method
 

Step-by-Step Instructions
  1. Finely chop the yellow onion and mince the garlic. Peel and dice the sweet potatoes into even cubes for consistent cooking.
  2. Add the chopped onion, garlic, sweet potatoes, canned diced tomatoes, red kidney beans, and frozen corn into the slow cooker. Pour in the vegetable broth, followed by the lentils, chili powder, cumin, salt, and pepper. Stir well.
  3. Cover the slow cooker and set it to cook on low for 8 hours or on high for 4.5 hours.
  4. After cooking, taste your chili and adjust seasoning as needed.
  5. Ladle into bowls and garnish with diced avocado and parsley or cilantro.
