  • 1 pound Lean Ground Turkey or ground chicken/beef
  • 2 cups Sweet Potatoes diced into small cubes
  • 1 medium Onion chopped
  • 2 cloves Garlic minced
  • 1 cup Bell Peppers chopped
  • 1 can Diced Tomatoes canned
  • 2 cups Chicken Broth or vegetable broth
Seasoning
  • 2 tablespoons Chili Powder adjust for heat
  • 1 teaspoon Cumin
  • to taste teaspoon Salt
  • to taste teaspoon Pepper

Preparation
  1. Wash and peel the sweet potatoes, then dice them into small cubes. Chop the onion, bell peppers, and garlic.
  2. Gather all ingredients including canned diced tomatoes and chicken broth.
Cooking
  1. In a large pot, heat a drizzle of olive oil over medium heat. Add the lean ground turkey, cooking for about 5-7 minutes until browned.
  2. Add the diced onion, minced garlic, and chopped bell peppers, sautéing for about 4-5 minutes until the onion becomes translucent.
  3. Stir in diced sweet potatoes, canned tomatoes, chicken broth, chili powder, cumin, salt, and pepper. Bring to a gentle boil.
  4. Once boiling, reduce heat to low, cover, and let simmer for 25 minutes.
  5. After simmering, taste the chili and adjust seasoning if needed before serving.
