  • 1 tablespoon Oil or vegetable broth for lighter option
  • 1 medium White onion or yellow onion
  • 300 g Carrots or parsnips
  • 500 g Potatoes or sweet potatoes
  • 70 g Celery or bell peppers
For Flavor
  • 3 cloves Garlic minced or garlic powder
  • 1 teaspoon Fresh thyme or dried thyme
  • 1 teaspoon Fresh rosemary or dried rosemary
  • 1 teaspoon Fresh oregano or dried oregano
  • 1 teaspoon Sea salt adjust based on broth
  • 1 teaspoon Black pepper omit if desired
For Depth
  • 1/4 teaspoon Nutmeg or cinnamon
  • 1 teaspoon Smoked paprika or regular paprika
  • 1/4 teaspoon Red pepper flakes adjust to taste
For the Body
  • 720 ml Vegetable broth or water with bouillon
  • 350 g Frozen peas or fresh peas
  • 120 g Dairy-free heavy cream or canned coconut milk
  • 2 tablespoons Cornstarch or arrowroot flour
  • 1/2 cup White wine or more broth

Method
 

Step-by-Step Instructions
  1. Heat oil in a large pot over medium heat. Add diced onion and sauté for 2–4 minutes until translucent.
  2. Add chopped carrots, diced potatoes, and sliced celery. Stir in minced garlic, herbs, salt, pepper, nutmeg, smoked paprika, and red pepper flakes. Sauté for 1 minute.
  3. Pour in vegetable broth and bring to a boil. Reduce heat and simmer for 5 minutes.
  4. Add frozen peas and simmer uncovered for 15 minutes until all vegetables are tender.
  5. Whisk together cornstarch and dairy-free cream, then stir into the pot. Cook for 2–3 minutes until thickened.
  6. Add splash of white wine, simmer for 3–4 minutes, and adjust seasonings to taste.
  7. For a creamier texture, blend half of the stew, then mix back into the pot.
  8. Serve hot, garnished with fresh herbs if desired, and enjoy!
