- Preheat your oven to 325°F (160°C).
- Combine graham cracker crumbs, melted unsalted butter, and granulated sugar in a mixing bowl. Press into the bottom of the springform pan. Bake for 10 minutes.
- Beat cream cheese until smooth. Add granulated sugar and vanilla extract, mixing until combined. Add eggs one by one, then fold in sour cream. Pour over cooled crust.
- In a saucepan, combine diced apples, brown sugar, cinnamon, and lemon juice. Cook until softened, then thicken with cornstarch slurry. Allow to cool.
- Mix flour, brown sugar, and cinnamon; cut in cold butter until crumbly.
- Layer the apple filling over the cheesecake mixture and sprinkle with crumble topping. Bake for 55-65 minutes.
- Turn off the oven; allow cheesecake to cool inside for about an hour, then refrigerate for 4 hours or overnight.
