- Prepare the strawberry swirl by mixing fresh strawberry puree, sugar, and lemon juice.
- Mix the cheesecake filling by beating cream cheese, then adding sugar, eggs, sour cream, and cocoa powder.
- Pour half of the cheesecake filling into the crust, swirl in the strawberry mixture and add the rest of the cheesecake filling.
- Bake for 50-60 minutes until the edges are set and the center has a slight jiggle.
- Cool in the oven for 1 hour with the door ajar.
- Remove from the oven and cool to room temperature, then refrigerate for at least 4 hours.
