Step-by-Step Instructions for Homemade Halloumi Carbonara
- Fill a large pot with water, add a generous pinch of kosher salt, and bring it to a rolling boil over high heat.
- While waiting for the water to boil, mince 2-3 cloves of garlic and slice the halloumi into 1/4-inch thick pieces.
- In a mixing bowl, crack 2 large eggs and add your grated Parmesan cheese, whisking them together until smooth.
- Once the water is boiling, add your spaghetti and cook it per package instructions, usually for about 8-10 minutes.
- Heat 2 tablespoons of extra-virgin olive oil in a large skillet over medium-high heat.
- Add the halloumi slices to the skillet and fry for about 2 minutes until golden brown.
- After the halloumi is cooked, toss the minced garlic into the skillet and sauté for about 30 seconds.
- Add the drained spaghetti to the skillet along with the reserved pasta water, about 1/2 cup.
- Remove the skillet from heat and pour in your egg and cheese mixture while vigorously stirring.
- Season with freshly cracked black pepper and serve immediately.

Notes
Allow the spaghetti to cool for about 30 seconds after draining to prevent scrambling when mixing with the egg mixture.
