Step-by-Step Instructions for Homemade Halloumi Carbonara
  1. Fill a large pot with water, add a generous pinch of kosher salt, and bring it to a rolling boil over high heat.
  2. While waiting for the water to boil, mince 2-3 cloves of garlic and slice the halloumi into 1/4-inch thick pieces.
  3. In a mixing bowl, crack 2 large eggs and add your grated Parmesan cheese, whisking them together until smooth.
  4. Once the water is boiling, add your spaghetti and cook it per package instructions, usually for about 8-10 minutes.
  5. Heat 2 tablespoons of extra-virgin olive oil in a large skillet over medium-high heat.
  6. Add the halloumi slices to the skillet and fry for about 2 minutes until golden brown.
  7. After the halloumi is cooked, toss the minced garlic into the skillet and sauté for about 30 seconds.
  8. Add the drained spaghetti to the skillet along with the reserved pasta water, about 1/2 cup.
  9. Remove the skillet from heat and pour in your egg and cheese mixture while vigorously stirring.
  10. Season with freshly cracked black pepper and serve immediately.
