Creamy Garlic Parmesan Potatoes Ingredients
  • 2 pounds Yukon Gold Potatoes Can substitute with russet or red potatoes.
  • 1/2 cup Heavy Cream Can substitute with milk or dairy-free alternative.
  • 1/2 cup Parmesan Cheese Can swap for cheddar or nutritional yeast.
  • 2 tablespoons Unsalted Butter Salted butter can be used.
  • 1 tablespoon Fresh Parsley Optional garnish, can substitute with chives.

Method
 

Preparation Steps
  1. Preheat your oven to 400°F (200°C). Prepare your baking dish.
  2. In a bowl, whisk together BBQ sauce, honey, olive oil, garlic powder, smoked paprika, salt, and pepper.
  3. Marinate chicken thighs in the prepared mixture for at least 20 minutes.
  4. Bake the marinated chicken in the oven for 35-40 minutes until caramelized and cooked through.
  5. Prepare Yukon Gold potatoes by rinsing, peeling, and cutting them into chunks. Boil until fork-tender.
  6. Mash the potatoes with heavy cream, Parmesan cheese, garlic powder, butter, salt, and pepper.
  7. Serve the chicken with creamy garlic Parmesan potatoes, garnished with parsley.
