Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper or lightly grease it with cooking spray.
In a small bowl, whisk together the honey, soy sauce, Dijon mustard, olive oil, minced garlic, black pepper, salt, and lemon juice until well combined.
Place the salmon fillets skin-side down on the prepared baking sheet. Brush the honey glaze generously over the top of each fillet.
Bake the salmon in the preheated oven for 12-15 minutes, or until the salmon flakes easily with a fork and is cooked through.
For an extra caramelized finish, switch the oven to broil for the last 2-3 minutes of cooking, keeping a close eye to prevent burning.
Remove the salmon from the oven and let it rest for a few minutes. Garnish with chopped parsley before serving.
