In a medium bowl, whisk together honey, lime juice, soy sauce, olive oil, minced garlic, cumin, salt, and black pepper to create the marinade.
Place the chicken breasts in a resealable plastic bag or shallow dish and pour the marinade over the chicken. Seal the bag or cover the dish, then refrigerate for at least 30 minutes or up to 2 hours for more flavor.
Preheat your grill or a grill pan over medium-high heat. Remove the chicken from the marinade and discard the marinade.
Grill the chicken for about 6-7 minutes on each side, or until the internal temperature reaches 165°F and the chicken is cooked through.
While the chicken is grilling, prepare the brown rice according to package instructions if not already cooked.
Once the chicken is done, let it rest for 5 minutes before slicing it into strips.
Serve the sliced chicken over a bed of brown rice, garnished with chopped cilantro and lime wedges on the side.
