Ingredients
  

  • 2 pounds boneless skinless chicken thighs
  • 1 teaspoon salt
  • 1 teaspoon black pepper
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 tablespoon olive oil
  • 1/2 cup honey
  • 1/4 teaspoon red pepper flakes adjust to taste
  • 1 cup crumbled feta cheese
  • 1 tablespoon fresh lemon juice
  • 1 tablespoon chopped fresh parsley for garnish

Method
 

  1. Preheat your oven to 400°F (200°C).
  2. In a large bowl, season the chicken thighs with salt, black pepper, garlic powder, and onion powder. Toss to coat evenly.
  3. In a large oven-safe skillet, heat the olive oil over medium-high heat. Add the seasoned chicken thighs and sear for about 5 minutes on each side, until golden brown.
  4. While the chicken is cooking, in a small bowl, mix together the honey and red pepper flakes.
  5. Once the chicken is browned, pour the honey mixture over the chicken, ensuring each piece is coated.
  6. Sprinkle the crumbled feta cheese evenly over the chicken.
  7. Transfer the skillet to the preheated oven and bake for 20-25 minutes, or until the chicken is cooked through (internal temperature should reach 165°F).
  8. Remove from the oven and drizzle with fresh lemon juice. Garnish with chopped parsley before serving.
