Preheat your grill or a non-stick skillet over medium heat. If using a grill, lightly oil the grates to prevent sticking.
In a small saucepan, combine the honey and red pepper flakes. Heat over low heat until warm, stirring occasionally. Remove from heat and stir in the lemon juice.
Brush the halloumi slices with olive oil on both sides.
Place the halloumi on the grill or in the skillet. Cook for about 2-3 minutes on each side, or until golden brown and slightly crispy.
Once cooked, transfer the halloumi to a serving platter. Drizzle the hot honey mixture over the cheese and garnish with fresh herbs.
Serve immediately with crusty bread or crackers for dipping.
