Ingredients

For the Frittata
  • 8 large eggs Provide the base of the frittata; use room temperature for better mixing.
  • 6 strips bacon, chopped Adds smoky flavor and crisp texture; can substitute with turkey bacon for a lighter version.
  • 2 medium potatoes, diced Contribute heartiness and structure; ensure they’re not overcooked to avoid a mushy texture.
  • 1/2 cup heavy cream Adds richness and moisture; can substitute with whole milk for a lighter option.
  • 1/4 cup fresh chives, chopped Brings freshness and color; can substitute with green onions if necessary.
  • 1/2 cup cheddar cheese, grated Enhances flavor with creaminess; consider swapping for a sharp cheese or a dairy-free version.
  • Salt and pepper Essential for seasoning; adjust based on personal dietary preferences.
  • 2 tablespoons olive oil Helps cook the bacon and potatoes; can substitute with butter for added flavor.

Step-by-Step Instructions
  1. Preheat your oven to 375°F (190°C).
  2. In a large oven-safe skillet, heat the olive oil over medium heat. Add the chopped bacon and cook until crispy, about 6-8 minutes. Remove bacon and set aside.
  3. In the same skillet, add the diced potatoes to the leftover bacon drippings. Sauté for about 10 minutes until golden brown and tender.
  4. In a mixing bowl, whisk together the eggs and heavy cream. Season with salt and pepper.
  5. Pour the egg mixture over the potatoes in the skillet. Gently stir to combine.
  6. Sprinkle the cooked bacon and grated cheddar cheese over the egg and potato mixture.
  7. Cook on the stovetop over medium heat for 3 minutes until the edges start to set.
  8. Transfer to the oven and bake for 15-20 minutes until set in the center and golden brown on top.
  9. Let the frittata rest for 5 minutes before garnishing with chives and slicing to serve.
