  • 3 large Eggs Room temperature
For the Ganache Topping
  • 8 ounces Dark Chocolate Finely chopped.
  • 1 cup Heavy Cream Do not use low-fat cream.

Method
 

Step-by-Step Instructions
  1. Preheat the oven to 325°F (163°C). Crush graham crackers and melt unsalted butter. Combine and press into a 9-inch springform pan. Bake for 10 minutes and let it cool.
  2. Beat softened cream cheese with granulated sugar until smooth. Gradually add Baileys Irish Cream, then add eggs one at a time until blended.
  3. Pour the filling over the cooled crust. Bake for 50-60 minutes until edges are set and center has a slight jiggle.
  4. Cool the cheesecake in the oven with the door ajar for 1 hour. Then cool completely at room temperature and refrigerate for at least 4 hours.
  5. Heat heavy cream in a saucepan until simmering. Remove from heat, add chopped dark chocolate, and stir until smooth.
  6. Pour the ganache over the chilled cheesecake and let set. Slice and serve.
