- Preheat the oven to 325°F (163°C). Crush graham crackers and melt unsalted butter. Combine and press into a 9-inch springform pan. Bake for 10 minutes and let it cool.
- Beat softened cream cheese with granulated sugar until smooth. Gradually add Baileys Irish Cream, then add eggs one at a time until blended.
- Pour the filling over the cooled crust. Bake for 50-60 minutes until edges are set and center has a slight jiggle.
- Cool the cheesecake in the oven with the door ajar for 1 hour. Then cool completely at room temperature and refrigerate for at least 4 hours.
- Heat heavy cream in a saucepan until simmering. Remove from heat, add chopped dark chocolate, and stir until smooth.
- Pour the ganache over the chilled cheesecake and let set. Slice and serve.
