  • 600 g boneless skinless chicken thighs Juicy when marinated
  • 3 tablespoons plain yogurt Greek yogurt is ideal for thickness

  • 2 teaspoons ground cumin Fresh ground enhances flavor
  • 1 teaspoon ground coriander Substitutable with caraway seeds
  • 1 teaspoon smoked paprika Regular paprika can be used for milder taste
  • 1 teaspoon ground turmeric Not mandatory, but adds health benefits
  • 1/2 teaspoon ground cinnamon Adjust based on preference
  • 3 cloves garlic, minced Essential for flavor
  • 1 teaspoon salt Adjust based on other salty ingredients
  • 1/2 teaspoon black pepper Freshly ground recommended
For the Wrap
  • 4 pieces pita breads Can swap for flatbreads or tortillas
  • 2 cups shredded lettuce Substitutable with leafy greens
  • 1 large tomato, sliced Juiciness and freshness
For Garlic Sauce
  • 1/2 cup mayonnaise Greek yogurt can lighten it
  • 3 cloves garlic, finely grated Adjust based on garlic preference
  • 2 tablespoons lemon juice Freshly squeezed is best
  • 1 tablespoon olive oil Any light oil works
  • 1/4 teaspoon salt To season without overpowering

Instructions
  1. In a large bowl, combine yogurt, olive oil, and spices, mixing until combined. Add chicken and marinate for at least 20 minutes.
  2. Prepare garlic sauce by mixing mayonnaise, grated garlic, lemon juice, and olive oil until smooth; season with salt and refrigerate.
  3. Preheat a grill pan over medium-high heat and cook marinated chicken for 4-5 minutes on each side until charred and fully cooked.
  4. Warm pita breads in the same pan for about 1 minute on each side until slightly toasty.
  5. Assemble your shawarma by laying sliced chicken on each pita, topping with lettuce and tomato, then drizzling garlic sauce.
  6. Fold the pita around the filling and serve immediately.

Notes

Marinate chicken for longer if possible. Avoid overcrowding the pan to achieve a nice char. Allow chicken to rest before slicing for tenderness.
