Step-by-Step Instructions
  1. Prepare Meatballs: In a large mixing bowl, combine ground beef or pork mix with breadcrumbs, grated Parmesan, egg, minced garlic, Italian seasoning, salt, and pepper. Mix gently and roll into 1-inch meatballs.
  2. Sear Meatballs: Heat a large pot over medium heat with olive oil. Brown the meatballs for 2-3 minutes on each side, then set aside.
  3. Sauté Vegetables: In the same pot, add diced onion, celery, and minced garlic. Sauté for 3-4 minutes until softened.
  4. Build Soup Base: Stir in diced tomatoes and broth. Season and bring to a simmer before adding meatballs back to the pot. Simmer for about 15 minutes.
  5. Cook Pasta: Add small pasta to the soup and cook for 8-10 minutes until tender but al dente.
  6. Add Cream and Cheese: Stir in heavy cream and extra Parmesan. Heat for 2-3 minutes until combined.
