  • 2 large cucumbers sliced into rounds
  • 1 pint cherry tomatoes halved
  • 8 ounces fresh mozzarella balls drained
  • 1/4 cup fresh basil leaves torn
  • 3 tablespoons extra virgin olive oil
  • 2 tablespoons balsamic vinegar
  • Salt and pepper to taste

Method
 

  1. In a large bowl, combine the sliced cucumbers, halved cherry tomatoes, and mozzarella balls.
  2. Add the torn basil leaves to the bowl.
  3. Drizzle the olive oil and balsamic vinegar over the salad. Season with salt and pepper to taste.
  4. Gently toss all the ingredients together until well combined.
  5. Serve immediately or chill in the refrigerator for 15-30 minutes to enhance the flavors.
