Step-by-Step Instructions
  1. In a medium mixing bowl, combine rolled oats, natural peanut butter, honey, and vanilla extract. Stir until well mixed.
  2. Lightly spray a muffin tin with nonstick cooking spray.
  3. Divide the oat mixture evenly among the muffin cups, pressing it down firmly.
  4. In a microwave-safe bowl, combine chocolate chips and coconut oil. Microwave in 30-second increments until melted and smooth.
  5. Spoon the melted chocolate over each oat cup and spread it evenly.
  6. Sprinkle a pinch of sea salt on top before the chocolate sets.
  7. Place the muffin tin in the freezer for about 1 hour to allow the cups to chill and set.
  8. Remove from freezer and gently pop out the oat cups. Serve immediately or store as desired.
