Cooking Instructions
  1. Preheat your oven to 400°F (200°C). Gather your ingredients and baking sheet.
  2. Season the chicken breasts generously with salt, pepper, and optional garlic powder or Italian seasoning.
  3. In a skillet over medium heat, add olive oil and heat for a minute. Cook the seasoned chicken breasts, about 6-7 minutes on each side.
  4. Remove the chicken from the skillet and let it rest for 5 minutes before slicing into thin strips.
  5. Spread fresh basil pesto evenly over each flatbread on a clean baking sheet.
  6. Arrange the sliced chicken over the pesto, then add shredded mozzarella cheese, halved cherry tomatoes, and grated Parmesan.
  7. Bake in the preheated oven for 10-12 minutes until the cheese melts and edges are golden brown.
