- In a large mixing bowl, beat cream cheese and granulated sugar until smooth and creamy, about 2-3 minutes.
- Gradually pour in heavy cream and whole milk, mixing until well combined.
- Add instant vanilla pudding mix, pumpkin puree, and pumpkin pie spice, mixing until fluffy and smooth.
- Layer graham crackers in a 9x13 inch serving dish, spoon pumpkin filling over crackers, and repeat layers, finishing with filling on top.
- Cover and refrigerate for at least 4 hours, preferably overnight.
- Before serving, drizzle with caramel sauce and sprinkle with chopped pecans.
