Preparation
- Preheat your oven to 350°F (175°C) and prepare a 9x13-inch baking dish by greasing it or lining it with parchment paper.
- In a medium mixing bowl, combine the graham cracker crumbs, melted unsalted butter, and granulated sugar. Mix until sandy and press into the baking dish.
- Bake the crust for 10 minutes and remove from the oven to cool slightly.
- In a bowl, beat cream cheese with sugar until smooth, then add eggs one at a time, mixing thoroughly after each addition.
- Toss the diced apples with cinnamon, nutmeg, and lemon juice, then fold into the cream cheese mixture.
- Pour apple cheesecake mixture over the cooled crust and spread evenly. Sprinkle brown sugar on top.
- Bake for 30 to 35 minutes until center is set and edges are lightly golden.
- Allow bars to cool to room temperature before refrigerating for at least 2 hours.
