Method
 

Preparation
  1. Preheat your oven to 350°F (175°C) and prepare a 9x13-inch baking dish by greasing it or lining it with parchment paper.
  2. In a medium mixing bowl, combine the graham cracker crumbs, melted unsalted butter, and granulated sugar. Mix until sandy and press into the baking dish.
  3. Bake the crust for 10 minutes and remove from the oven to cool slightly.
  4. In a bowl, beat cream cheese with sugar until smooth, then add eggs one at a time, mixing thoroughly after each addition.
  5. Toss the diced apples with cinnamon, nutmeg, and lemon juice, then fold into the cream cheese mixture.
  6. Pour apple cheesecake mixture over the cooled crust and spread evenly. Sprinkle brown sugar on top.
  7. Bake for 30 to 35 minutes until center is set and edges are lightly golden.
  8. Allow bars to cool to room temperature before refrigerating for at least 2 hours.
