Preparation Steps
- Preheat your oven to 160°C (320°F). Grease and line a baking tray with parchment paper.
- Soak your assorted dried fruits in brandy for at least 30 minutes.
- In a large mixing bowl, beat the room temperature butter and brown sugar together until light and fluffy.
- Add in your room temperature eggs one at a time, mixing well after each addition.
- Sift together your flour, baking powder, and chosen spices. Gradually fold this into the wet ingredients.
- Fold the soaked dried fruits into the batter.
- Pour the cake batter into the prepared baking tray and bake for approximately 1 hour.
- Once baked, cool in the pan for about 15 minutes before transferring to a wire rack.
- Once completely cooled, cover with a layer of marzipan and fondant for decoration.
- Cut the cake into squares for serving.
