  • 3 large Eggs Use room temperature.
  • 2 cups Flour All-purpose flour; gluten-free may be substituted.
  • 2 teaspoons Baking Powder Ensure it’s within date.
  • 1 teaspoon Spices (e.g., cinnamon, nutmeg) Adjust according to taste.
  • 1/4 cup Brandy Replace with orange juice for a non-alcoholic version.
For the Decoration
  • 250 grams Marzipan Can be omitted or replaced with fondant.
  • 250 grams Fondant Adjust rolling thickness for a unique finish.

Method
 

Preparation Steps
  1. Preheat your oven to 160°C (320°F). Grease and line a baking tray with parchment paper.
  2. Soak your assorted dried fruits in brandy for at least 30 minutes.
  3. In a large mixing bowl, beat the room temperature butter and brown sugar together until light and fluffy.
  4. Add in your room temperature eggs one at a time, mixing well after each addition.
  5. Sift together your flour, baking powder, and chosen spices. Gradually fold this into the wet ingredients.
  6. Fold the soaked dried fruits into the batter.
  7. Pour the cake batter into the prepared baking tray and bake for approximately 1 hour.
  8. Once baked, cool in the pan for about 15 minutes before transferring to a wire rack.
  9. Once completely cooled, cover with a layer of marzipan and fondant for decoration.
  10. Cut the cake into squares for serving.
