Preheat your oven to 350°F (175°C).
In a large mixing bowl, combine the shredded chicken, cauliflower rice, buffalo sauce, coconut milk, diced jalapeños, garlic powder, onion powder, salt, black pepper, and paprika. Mix until well combined.
Transfer the mixture to a greased 9x13-inch baking dish. Spread it evenly.
Sprinkle the shredded cheddar cheese on top of the casserole.
Bake in the preheated oven for 25-30 minutes, or until the cheese is bubbly and golden brown.
Remove from the oven and let it cool for 5 minutes. Garnish with chopped green onions before serving.
