Method
 

Preparation
  1. Grate one white onion and squeeze out excess moisture. Grate frozen butter and mince garlic.
  2. In a mixing bowl, combine ground chicken, grated onion, butter, garlic, Worcestershire sauce, mayonnaise, mustard, lemon zest, and optional liquid smoke; stir in parmesan cheese and season with salt and pepper.
  3. Divide mixture into four equal portions, shape into patties with a thumbprint indentation, and season again with salt and pepper.
  4. Chill patties on a parchment-lined baking sheet for about 20 minutes.
  5. Preheat the grill to medium-high heat. Grill patties for 5 to 6 minutes on each side until fully cooked.
  6. Let patties rest for 5 minutes while toasting hamburger buns on the grill. Assemble with lettuce, dressing, parmesan, and croutons.
