In a mixing bowl, combine the drained cottage cheese and egg. Mix well until smooth.
Add the almond flour, baking powder, garlic powder, onion powder, salt, and black pepper to the bowl. Stir until a dough forms.
Divide the dough into 4 equal portions and shape each portion into a flat round disc, about 1/4 inch thick.
Heat 1 tablespoon of olive oil in a non-stick skillet over medium heat. Once hot, place two flatbreads in the skillet and cook for 3-4 minutes on each side until golden brown.
Remove the cooked flatbreads and repeat with the remaining oil and dough.
Serve warm or at room temperature.
