Preheat your oven to 450°F (232°C). Place the pizza crusts on baking sheets or pizza stones.
In a mixing bowl, combine the ricotta cheese, lemon juice, lemon zest, honey, vanilla extract, salt, and black pepper. Mix until smooth and well combined.
Spread the ricotta mixture evenly over each pizza crust, leaving a small border around the edges.
Sprinkle the shredded mozzarella and grated Parmesan cheese evenly over the ricotta layer on both pizzas.
Bake in the preheated oven for 12-15 minutes, or until the cheese is bubbly and the crust is golden brown.
Remove the pizzas from the oven and let them cool for a couple of minutes.
Top each pizza with fresh arugula and toasted pine nuts before slicing and serving.
