  • 200 grams Feta Cheese crumbled or vegan feta
  • 1 small Red Onion diced
  • 1 bunch Fresh Herbs such as parsley and mint
For the Dressing
  • 1 tablespoon Lemon Juice freshly squeezed
  • 3 tablespoons Olive Oil or avocado oil
  • 1 tablespoon Honey or Maple Syrup for vegan option use maple syrup
  • to taste Salt & Pepper for seasoning

Method
 

Instructions
  1. In a large mixing bowl, drain and rinse the chickpeas. Add crumbled feta, diced red onion, and chopped herbs. Stir gently to combine.

  3. Pour the dressing over the salad base and toss gently, ensuring ingredients are well-coated.
  4. Season with salt and freshly ground black pepper to taste and adjust as needed.
  5. Let the salad rest for 5 to 10 minutes before serving to meld the flavors.
  6. Toss again gently and serve in bowls or on a platter, garnishing as desired.
