Method
 

Step-by-Step Instructions
  1. Preheat your oven to 450°F (232°C). Gather ingredients and a 9 x 13-inch casserole dish.
  2. In a mixing bowl, combine diced Yukon gold potatoes with ranch dressing, dried parsley, oregano, paprika, salt, and pepper. Mix thoroughly and spread in greased casserole dish. Bake uncovered for 30 minutes, stirring every 10 minutes.
  3. In another bowl, combine diced chicken breasts with remaining ranch dressing. Season with salt and pepper.
  4. After 30 minutes, layer the chicken mixture on top of the parbaked potatoes. Cover with foil and reduce oven temperature to 400°F (204°C). Bake for an additional 20 minutes.
  5. Remove foil and sprinkle crumbled bacon and cheese over the casserole. Return to oven and bake for another 10 minutes until cheese is melted and bubbly.
  6. Allow casserole to cool for a few minutes before serving. Garnish with chopped green onions before serving.
