Preheat your oven to 425°F (220°C).
In a large bowl, toss the diced potatoes with olive oil, garlic powder, chili powder, cumin, salt, and pepper until evenly coated.
Spread the seasoned potatoes in a single layer on a baking sheet. Bake for 25-30 minutes, or until golden brown and crispy, stirring halfway through.
While the potatoes are baking, prepare the ground beef or turkey in a skillet over medium heat until fully cooked. If using black beans, simply heat them in a saucepan.
Once the potatoes are done, assemble the bowls by layering the baked potatoes, cooked meat or beans, corn, diced tomatoes, and shredded cheese in individual serving bowls.
Top each bowl with diced avocado, a dollop of sour cream, and a sprinkle of fresh cilantro. Serve with lime wedges on the side.
