Method
 

Preparation
  1. Preheat the oven to 425°F (220°C).
  2. Wash and peel the sweet potatoes, then slice them into 1/8-inch thick rounds.
  3. Line a baking sheet with parchment paper and arrange the sweet potato rounds in a single layer.
  4. Drizzle a high-heat cooking oil over the sweet potatoes and sprinkle with garlic powder, salt, and chili powder.
  5. Bake for 20 minutes, flipping halfway through, and broil for an additional 1-2 minutes if desired.
  6. Rinse and drain the black beans.
  7. Assemble by layering the sweet potato rounds with black beans and shredded cheese.
  8. Return to the oven for about 5 minutes, or until the cheese is melted.
  9. Top with salsa, sour cream, and diced avocado, along with any optional toppings.
  10. Serve immediately warm from the oven.
