  • 2 cups Cottage Cheese full-fat or low-fat
  • 1 cup Shredded Mozzarella Cheese or other melting cheese
  • 1/2 cup Grated Parmesan Cheese optional
Sauce and Seasonings
  • 1 cup Low-Sugar Marinara Sauce no added sugars
  • 1 teaspoon Dried Oregano or fresh oregano
  • 1 teaspoon Garlic Powder or fresh garlic
  • 1/2 teaspoon Crushed Red Pepper Flakes optional
Toppings
  • 1 cup Mini Pepperoni Slices or turkey pepperoni
  • 2 seconds Olive Oil Spray for greasing ramekins

Method
 

Preparation Steps
  1. Preheat the oven to 400°F (200°C) and grease the ramekins with olive oil spray.
  2. Spoon 1/3 cup of cottage cheese into each ramekin, smoothing it out evenly.
  3. Sprinkle garlic powder, dried oregano, and crushed red pepper flakes over the cottage cheese and mix gently.
  4. Drizzle 1 to 1.5 tablespoons of low-sugar marinara sauce on top of the cottage cheese and spread it out.
  5. Top each ramekin with shredded mozzarella cheese and a sprinkle of grated Parmesan.
  6. Place mini pepperoni slices on top of the cheese layer.
  7. Bake in the preheated oven for 12-15 minutes until the cheese is melted and bubbly.
  8. Cool for a few minutes before serving or storing leftovers.
